Not all matcha is equal. Ceremonial grade refers to the highest classification of powdered green tea, made from the youngest first-flush leaves of shade-grown Camellia sinensis plants, hand-selected, de-stemmed, and stone-ground at low temperatures to preserve their natural amino acids, chlorophyll, and antioxidants.
The distinction begins with how the plant is grown. In Kagoshima, our tea plants are covered for 20+ days before harvest, blocking sunlight and forcing elevated production of L-theanine, the compound responsible for matcha's signature calm-alert state. The result: a naturally sweet, deeply umami powder with no bitterness.

You can, though it will taste stronger and more bitter than ceremonial matcha. Most people prefer culinary matcha in lattes or blended drinks and keep ceremonial grade for drinking with water alone.
As a rule of thumb: 1–2 grams for a latte or smoothie, and 1–2 tablespoons for a standard cake or cookie batch. Start small matcha flavour intensifies quickly.
