Most "Japanese matcha" sold in Australia isn't wholly Japanese — it's blended, relabelled, or grown elsewhere and finished in Japan. Ours comes from one JAS-certified family farm in Kagoshima that's grown tencha for seven generations. First harvest only, shade-grown for three weeks, granite stone-ground, and independently lab-tested here in Australia for heavy metals. Every matcha below is from that single farm and that single harvest, whether you want a ceremonial grade to drink straight or a culinary grade for the kitchen.
